  • 3 Tb. oil
  • 1 large onion, diced
  • 2 Tb. freshly minced ginger
  • 2-3 cloves garlic, minced
  • 1 Tb. Madras curry powder
  • 1 tsp. tumeric
  • 1 tsp. garam masala
  • 2 bay leaves
  • ¼ tsp. cayenne*
  • 1-14 oz. can of crushed tomatoes or tomato puree
  • 1 heaping cup of plain yogurt
  • 1 ¾ cups of water
  • 2 lbs. raw peeled shrimp
  • Rice:
  • 1 ½ cups dried Basmati rice
  • 1 pinch saffron (optional)
  • Salt and pepper
